RECIPE // lemon coconut bliss balls GF

I am coining these bliss balls because they are exactly that – taste just like those lemon chocolates from Hotel Chocolat. They are gluten free, and low in sugar. My only issue with them is that they’re only two bites each..

Pop a couple of these in your lunchbox for a sweet treat mid afternoon with a cup of tea maybe? Sounds good to me.

Instructions
  1. Put all ingredients (except 1 tbsp reserved coconut) into a food processor and blend until well combined.
  2. Scoop out a heaping teaspoon of mixture at a time and roll into balls. Finish by rolling in reserved coconut to cover the ball.
  3. Set in fridge for 1 hour to chill and set.
