RECIPE // banana protein pancake – GF, DF

I have listed this recipe so many times on my Instagram profile, and can’t believe it wasn’t on my blog! It is my go-to breakfast for when I fancy something sweet. It’s dairy free, gluten free and contains no grains. Of course it is really delicious too – even George wants some!

There are a few tricks to making it well which I have perfected over the past 6 months, so here they are. Let me know if you give it a go and enjoy it too.

Macros will vary, but my recipe with yoghurt, honey and berries is:

Instructions
  1. Blend the pancake ingredients apart from the coconut oil;
  2. Melt coconut oil in a large frying pan;
  3. Add the pancake mixture and spread out in the pan;
  4. After a minute or so, pop the frying pan under the grill to brown the top;
  5. Flip onto a plate and add your toppings.
Recipe Notes

Use a frying pan which can be put under the grill or in the oven - trying to flip the pancake never works for me so this method is much easier.
